FOOD LOG:

 

7:00AM

- Coffee with creamer

9:45AM

- Same as yesterday except I used 2 slices of bacon fried to crispy goodness (probably won't have this again for a little while...got a little upset tummy afterwards)

1:00PM

- Leftover salmon fillet

- Leftover creamed peas

5:30PM

- Some apricot leather right out of the oven

6:15PM

- Taco Salad: Mix of iceburg & romaine salad, taco meat, shredded cheddar, sliced olives, tomato and Bacon Ranch (out of regular ranch...forgot all about my plan of using greek yogurt and hot sauce as a topper instead of Ranch)

7:00PM

- More apricot leather...seriously need to stop eating this stuff..it's NOT helping my sugar cravings! (I ended up drinking a big glass of water and popped a stick of spearmint gum in my mouth...much better!)

 

TRAINING:

- Rest day...

There really isn't a recipe. The first 2 batches I made, I added 1T lemon juice and 2T honey (to keep it healthy) and that was great. But, then discovered that the fruit was wonderful all by itself. So I just toss the fruit in the blender(8 or 9 apricots will make 2 cups which is enough for one sheet pan) until smooth and pour it onto the plastic. I added plums to one batch- yummy!

Heh. I'd love to ask for your leather recipe... But I better not... :)
